A well-known Las Vegas restaurateur and a successful real estate developer have gotten together to launch a new concept in burger eateries – kind of along the lines of “let them build it and they’ll come.”  

Grind Burger Bar & Lounge, the creation of restaurateur Mark DiMartino and business partner Barry Feldman, opened on September 25 on Tropicana Avenue. The casual and intimate 90-seat build-your-own-burger restaurant, which is open for lunch, dinner, and late night, specializes in serving custom burgers of all types, using hand-pressed meats and quality ingredients.  

Patrons can choose from premium cuts of fresh ground chuck as well as hand-pressed turkey and meatless burgers, fresh chicken breast, premium cheeses, and three varieties of freshly baked buns. They can then have all the fun of choosing from 20 toppings, including such items as fried egg, grilled asparagus, and Sicilian olive salad. On top of that, there are 20 homemade specialty sauces, from wasabi mayonnaise and San Marzano tomato salsa to cayenne pepper ranch dressing.  

Vegetarians don’t have to stay away, either, since Grind Burger offers selections for non-meat lovers, too. The meatless burger is made with chickpeas and Mediterranean spices and there is  a vegetarian chopped salad made with fresh veggies, a Caprese sandwich with fresh mozzarella and tomatoes, and Gracie’s Favorite, a portabella mushroom sandwich with grilled zucchini, roasted red peppers, basil pesto and a toasted portabella mushroom cap bun.

The concept behind Grind Burger Bar & Lounge is to allow guests to have fun, be creative and to create the custom burger of their dreams,” said DiMartino. “We pride ourselves in offering a quality product using the freshest, most unique ingredients.  In fact, the combinations of ingredients are virtually endless. Although you can’t go wrong with our traditional American cheeseburger – it’s a timeless classic, just like a pair of Chuck Taylor sneakers, Levi’s and a plain white T-shirt – my recommendation is the turkey burger with provolone cheese, ajvar (pureed roasted eggplant and peppers), mayonnaise, sautéed spinach and garlic on a wheat bun.”  

The diverse menu also includes appetizers such as Mozzarella Tempura and That Calamari, three styles of potatoes, a selection of specialty sandwiches, and fresh chopped salads. Drinks include classic milkshakes, beers, wines, cocktails and non-alcoholic fare. There are also desserts, among them Grind’s Vanilla Ice Cream Sliders, house-made pastry shells filled with vanilla ice cream and topped with hot fudge sauce.  

DiMartino, who started in the family restaurant business 30 years ago with Di Martino’s  Deli, which was transformed into DiMartino’s fine dining Italian restaurant, is also the owner of Due Pizzeria and was the founder of the Tilted Kilt concept at the Rio.
