It has long been said that good things come in small packages. Green Valley Ranch Resort in Henderson is proving it with its new wine-by-the-once program that pairs wine tasting with its new Small Plates Menu in the Terra Verde Italian restaurant.  

A new wine bar and new state-of-the-art wine preservation system is allowing the restaurant to offer wine tasting on a daily basis. Because the special wine preservation system maintains the quality of the wine from its first to last glass, Terre Verde is now able to pour 1-ounce, 3-ounce and 5-ounce glasses of high-end, recognized wines at great value.  

On the Las Vegas Strip, folks would have to pay $2000 for a bottle of 1990 Chateau Mouton Rothschild, for example. But meanwhile, back at the Ranch, which opened in 2001 as the first luxury resort off the Strip, that wine is being offered for $34 an ounce while supplies last. Some of the other wines among Terra Verde’s offerings include a 1999 Chateau Haut Brion at $34 an ounce; Toscana Rosso, Marchesi Antinori,Tignanello05  at $10 an ounce;  Antinori, Bramito Umbria  ‘06   at $3 an ounce;  Sauvignon, Gaja Alteni di Brassica ’07-91 Points, $10 an ounce, and  Duckhorn, Napa Valley, CA ‘06 at $5 an ounce.  

The enomatics menu will constantly feature 8 white wines and 24 red wines and will change on a bi-weekly basis.  

To pair with the different wines, the “Small Plates Menu” has been created by Room Chef Elizabeth McGhee. It features tasting portions of several items ranging from $5-$7. Dishes such as Meatball Sliders, Garlic Fries, Crisp, Cheesy Risotto Balls with smoked bacon and cheese, Baked Laura Chennell goat cheese  with toasted crostinis, Colossal Green Olives stuffed with sausage and goat cheese, Crispy Ravioli filled with fresh ricotta and spinach, Sausage Sliders, and an Antipasto plate (the only $8 item). Both enomatics and small plates can be enjoyed throughout the restaurant in its front wine lounge, patio, or main dining area.  

In general, Terra Verde offers authentic Italian dishes including: homemade pastas, wood-fired pizzas, fresh fish and an extensive antipasto table. It also offers a collection of 1,500 bottles of premier Italian and California wines in its temperature-controlled wine storage.  

With wine being a prominent focus, the restaurant has begun offering wine dinners. The dinners feature one winemaker that pairs different varietals with a matching dish in a multi-course meal. Expert staff from the featured vineyard is on-hand to present the wines and discuss the process of taking the grape to the glass and to explain why it’s paired with that particular course.
